Base Salad (3 Ingredients!)

  • 6 cups fresh broccoli florets (about 2 large heads or 600g)
  • ½ cup dried cranberries
  • ¼ cup sliced almonds

Dressing Ingredients

  • ½ cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 small shallot, finely chopped
  • A pinch of cayenne pepper (optional)
  • Salt and black pepper, to taste

  1. Prepare the broccoli:
    Chop the broccoli into small bite-sized florets. Rinse and pat dry with a clean towel or paper towel.
  2. Make the dressing:
    In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, chopped shallot, cayenne, salt, and pepper until smooth and creamy.
  3. Assemble the salad:
    In a large mixing bowl, combine the broccoli florets, dried cranberries, and sliced almonds. Pour the dressing over the top and toss until evenly coated.
  4. Chill and serve:
    Cover and refrigerate for at least 30 minutes before serving. This gives the flavors time to blend beautifully.
